February 18: National Crab Stuffed Flounder Day

This dish is common in the gulf coast area of Alabama, Mississippi, and Louisiana. Flounder is a mild, delicate fish. When stuffed with rich, succulent crabmeat, a simple meal becomes an elegant feast.

Crab Stuffed Flounder

1/8 cup butter
1/8 cup celery, chopped
1/8 cup chopped green onions
1 clove garlic, minced
1/2 cup breadcrumbs
1/2 lb. crabmeat, cooked and shredded
1 tablespoon chopped parsley
4 thin flounder fillets
salt and pepper to taste
1 tablespoon melted butter

Preheat oven to 375F. Grease a baking dish. Set aside. Melt butter in a pan then add and saute celery, green onions, and garlic. Remove from heat and stir in breadcrumbs, crab, and parsley. Season with salt and pepper. Mix well. Divide mixture and evenly over fillets, reserving some to place on top. Beginning at the narrow end of the fillets, roll each fillet, and secure with a toothpick. Place rolled fillets seam side down in the baking dish. Drizzle with melted butter and top with reserved crabmeat mixture. Cover baking dish with foil. Bake 35 minutes. Remove foil and bake for an additional 5 minutes or until fish is cooked through.
